After nearly three months of living on my own and cooking for me and the hubby, I FINALLY got around to trying something with the crock pot. I don't know why I didn't do it sooner, but the past few weeks have been all about eating holiday leftovers and I haven't felt like cooking. Last night, or I guess I should say morning, I finally gave it a shot.
I don't really have a recipe for you, per se. I followed generic guidelines from a recipe on pinterest, but kind of winged the rest.
Grease the crock pot to keep the meat from sticking. I used a three pound beef roast, cut into pieces (in order to make it fit). Praise God for the defrost option on the microwave, because this wouldn't have been possible yesterday without it.
I seasoned with a generic meat/poultry/fish seasoning and a couple pinches of Italian seasoning.
Chop up roughly 2 pounds of potatoes (I used six small/medium organic potatoes). Toss in a one-pound bag of baby carrots. The "recipe" I followed said a large white or yellow onion, but I just used half, cut up in chunks for seasoning. The "recipe" also said to use a stalk of celery, but I opted out.
Then pour beef broth over the whole deal. The "recipe" said two cups but it's not necessary to measure. I actually used roughly a cup of beef broth and roughly a cup of vegetable broth because it was old and sitting in my fridge to be used up.
I cooked it on high for roughly three hours. When it had been boiling strongly for a while, I switched it to low and cooked for another three hours or so.
Now. I knew nothing about crock pots. I actually called my mom and asked if she had any tips because I wasn't about to burn a $9 beef roast. But it turned out DELICIOUS. The beef fell apart trying to take it out of the crock pot, none of the vegetables were too raw or too over cooked. And hey, even my husband liked it. That's a successful recipe.
I apologize for the lack of an actual recipe that I've tried to maintain. I honestly think this can be skewed so many ways
that a recipe honestly doesn't make much difference.
